A Little Bit of Cake Fun, Some Cake Recipes
(Yes, I'm thinking about Cake . . .and Food in General)
& My Thanksgiving Alter-Ego


One day and counting until Thanksgiving Day and for those of us who celebrate this wonderful day, we know that it TRULY is a wonderful holiday--it's not commericialized at all (except for all those grocery store ads; lol) and it totally focuses on food and family (and a little bit of football). We get together with as much family as we can, and eat as much food as we can!

In honor of all the food we'll be consuming, I bring you this cute little quiz: "Your Cake Personality." Look at the following cake types and pick your favorite, then go to the end of my post today to see what that says about your personality.

Your choices are--

1. Angel Food Cake
2. Brownies
3. Lemon Meringue
4. Vanilla cake with Chocolate Icing

6. Chocolate on Chocolate

(I'll also tell you which one I am at the end of this post!)

I spent some time last night making Gingerbread Cookies with Delaney (and Sydney, who basically just made a big ole mess; and McKenna, who came in and sampled everything). My initial plan was to make Gingerbread Cake with Lemon Sauce, but I got overruled by kids who wanted fun shaped cookies instead. But, I did want to give you the cake recipe because I'm planning on making it sometime this week because it is perfect for this time of year.

Gingerbread Cake with Lemon Sauce

I use my favorite boxed gingerbread cake mix, but you can certainly use your own recipe. (I'm a big believer in using boxed mixes if I can possibly get away with it, then just jazzing it up with additions or great frostings or whatever!) Don't pour the sauce over the entire cake; just put it in a side bowl and let everyone pour some over their own slices. To make the sauce--

1 cup sugar
1/2 cup butter
1/4 cup water
1 egg beaten
2 Tab. lemon juice
1 Tab. grated lemon peel or lemon zest
In a 1-qt. microwave-safe bowl, combine sugar, butter and water. Microwave, uncovered, on high for 2-3 minutes or until butter is melted and mixture begins to boil; stir. Add a small amount to egg; beat well. Return all to bowl. Microwave on high for 1 minute. Stir in lemon juice & peel or zest. Cook 1 minute longer or until slightly thickened. Serve w/gingerbread.

Trust me--it is delicous!! The first time I tried this I made such an absolute PIG of myself--it's really quite embarrasing when I get to eating desserts!!

Now speaking of delicious desserts, this is my all-time favorite cake to make so get ready . . .

I'm making this for Thanksgiving dinner on Thursday with Gary's family, but it's really going to be Gary's birthday cake (his birthday is this coming Sunday--so remember to go wish him Happy Birthday, since he may be an old birthday scrooge and not mention it on his BLOG!!).

Decadent Candy Bar Chocolate Cake

Prepare your favorite chocolate cake mix as directed on package. My personal favorite for this is Swiss Chocolate, but German Chocolate and just regular Chocolate works well.

After baked, "punch" small holes throughout the cake with the end of a butter knife. While cake is still warm (5-10 minutes after taking it out of the oven), pour sweetened condensed milk over the cake so it seeps down into the holes. (Okay, are you already drooling?)

While the cake is cooling, mix two small tubs of Cool Whip together with three chopped up Hersheys with Almonds candy bars. Spread this mixture over entire cake, then drizzle the cake with chocolate syrup.

Oh my gosh--this is SO good. You will win rave reviews if you serve this at your next gathering. (If I don't watch out, I may have to make me one of these before Thursday ever gets here!!)

(This is obviously designed with much younger ladies in mind, although I'm sure Gary might approve of this costume. But I definitely won't be wearing it to any of my family gatherings. LOL.)

7. ICE CREAM -- You like sports, whether it be baseball, football, basketball, or soccer. If you could, you would like to participate, but you enjoy watching sports. You don't like to give up the remote control. You tend to be self-centered and high maintenance.

8. CARROT CAKE -- You are a very fun loving person who likes to laugh. You are fun to be with. People like to hang out with you. You are a very warm hearted person and a little quirky at times. You have many loyal friends.

Okay, who were you? Does it match your personality? And what does it mean if I like ALL of those cakes? (hee hee . . . honestly, I do! But my two favorite here were ice cream and definitely Chocolate on Chocolate! And there are some things there that sound like me-- creative, adventerous, passionate, like sports, loves to laugh. But a cold exterior and high-maintenance? Nah . . .)

Well, I'm signing off and will spend the day doing some cooking and baking and getting ready for tomorrow's get-togethers. I may blog tomorrow (our gathering isn't until 2 and you all know that it's hard for me not to get on everyday and post something--Ha!), but if I don't . . .

I chose the carrot cake and was relieved when I read the description! I have been so busy and haven't had much opportunity to come visit in the last week. drooling over those cakes....we just tried making caking balls where you bake a cake, while warm, crumble mix with a tub of frosting,chill and the dip in melted chocolate...yummmm!!

I think they are pretty accurate actually (if I may say so myself, LOL). Loved this post. Now I wish I could have some cake! Oh yeah, I'm not supposed to have any sugar for a while. :(
